Happy Monday my sweeties! Hope everyone is doing well. Here’s a great idea for a healthy quick meal. Teriyaki Tofu Kale Salad! It took me less than 10 minutes to prepare this nutritious meal. Here’s the recipe:
Teriyaki Tofu Kale Salad
Ingredients:
1 tbsp olive oil
1 package @nasoya teriyaki Tofu, cubed
If you can find the tofu, used regular tofu and marinate with teriyaki sauce for a few minutes.
1 cup sliced mushrooms
1 tsp minced garlic
1 tbsp of amino coconuts
For the salad:
Kale
Red cabbage
Grape tomatoes
Pepita seeds
Sliced almonds
Avocado
Raspberry vinaigrette
Instructions:
Heat olive oil over medium heat. Add ingredients and sauté for about 5 minutes. Top your salad with tofu and enjoy! .

Me encanta la piña colada y me hace sentir que estoy en mi islita 🇵🇷 A esta receta le puedes añadir un poco de ron blanco o de coco y servir como una bebida para adultos. Simplemente sirve en un vaso y disfruta!

Piña Colada Smoothie Bowl:
1 can Coconut Milk, leche de coco
1 can Coconut Cream, crema de coco
1 cup Plain Yogurt, I used @so_delicious Yogurt de coco
2-3 cups of frozen pineapple, I used a whole pineapple, Piña congelada
Agave syrup, optional .
Instructions:
Refrigerate coconut milk and cream for a better consistency but it’s optional. Mix all the ingredients and blend until smooth. Serve with your favorite toppings.

Simple Green Smoothie:
Ingredients:
2 frozen bananas
1 handful of spinach or kale
1 apple, use your favorite
1 fresh squeezed lemon
1 cup of fresh squeezed orange juice or any orange juice you have. If not available use apple juice or any other.
I added a little bit of cilantro and a blend of moringa, wheatgrass and spirulina. That’s optional, feel free to add any protein powder or any other ingredients. .
