Who wants to join me for these delicious Puerto Rican Taquitos and Guacamole? 🇵🇷 Well, right now I’m watching my puppy Frida from the sunroom 😂 she’s playing around the house like crazy, after she looked me outside. Thank goodness I’m in the sunroom and not outside in the cold. I went outside to walk Olivia meanwhile Frida got crazy jumping on the door and she accidentally locked it 😩 so I’m here dreaming about these Taquitos while my husband comes to the rescue. . . Back to the recipe.....these Taquitos are made with empanada dough and they are a very popular fritter in my beautiful Puerto Rico 🇵🇷 I used beefy crumbles and sweet plantains. Celebrating Friday with these Grab-And-Go Blueberry Muffin Bites! They are so delicious, easy to make and healthy. Plus they pair amazingly with your morning coffee, tea or for a healthy snack in the afternoon! Have an amazing weekend my sweeties 😘 . . Here’s the recipe: Blueberry Muffin Bites: 1/4 cup coconut oil melted 1/4 cup pure maple syrup 1/3 cup unsweetened apple sauce 1/2 cup unsweetened almond milk @almondbreeze 1 teaspoon pure vanilla extract 1 cup gluten free whole wheat flour 1/2 cup almond flour blanched 1/8 teaspoon sea salt 2 teaspoons baking powder 1 1/3 cups blueberries save 1/3 cup for sprinkling on top 1 tablespoons chia seeds 1 tablespoons flaxseeds, grounded Method: Preheat the oven to 375 degrees Fahrenheit and adjust the oven rack to the middle position. Line a cupcake or small muffin tin with 10 parchment liners. In a large mixing bowl, whisk together all of the wet ingredients until well combined. Sift in the dry ingredients except for the chia seeds and flaxseed. Stir softly until everything has been well incorporated, but do not over mix! Fold in the blueberries and seeds. Fill each parchment liner about 3/4 full. The muffins won't rise too high. Bake for 22-25 minutes, or until a toothpick inserted into the center comes out clean.
