My husband went grocery shopping last week and when he went to the baking aisle, he couldn’t find any type of flour available. So, he called me to let me know that there were only cake mixes available. I told him not to worry because I had enough flour to last at least a month. Simple Green Smoothie: Ingredients: 2 frozen bananas 1 handful of spinach or kale 1 apple, use your favorite 1 fresh squeezed lemon 1 cup of fresh squeezed orange juice or any orange juice you have. If not available use apple juice or any other. I added a little bit of cilantro and a blend of moringa, wheatgrass and spirulina. Happy Sunday! Today is a day for meditation and resting. Sometimes we need to disconnect from the news and social media to recharge our minds. I was watching @nubedemaria videos about spirituality and listening to a very important message about what’s going on in the world right now. It makes me think about how much we have damaged our earth, the animals and ourselves. We need to take this time to think about what can we do to be grateful for our presence in this world. Take this time a love your family and yourself. . . Back to this pops....Nothing better than homemade popsicles. Especially when they’re healthy, filled with vitamins and so yummy. Today’s easy recipe was Vegan Chocolate Chips Cookie Bites. You can make them any size you want, I think bites are a good idea for little ones. Also feel free to replace any ingredient and let me know if you have any questions. Here’s the recipe: . . 𝒱𝑒𝑔𝒶𝓃 𝒞𝒽𝑜𝒸𝑜𝓁𝒶𝓉𝑒 𝒞𝒽𝒾𝓅 𝒞𝑜𝑜𝓀𝒾𝑒𝓈🍪 2/3 cup coconut oil, melted (any other oil works) 2/3 cup granulated sugar 2/3 cup brown sugar 1/2 cup unsweetened coconut milk (or any milk) 2 teaspoons vanilla 2 1/2 cups organic all-purpose flour 1 teaspoon baking soda 1 teaspoon baking powder 1/2 teaspoon salt 1 bag 10oz chocolate chips (I used dairy free) Pre heat oven to 350°F. In large bowl, mix coconut oil, granulated sugar and brown sugar until well mixed. Stir in coconut milk and vanilla. Stir in flour, baking soda, baking powder and salt until dough forms. Stir in chocolate chips. Drop dough by slightly rounded tablespoonfuls 2 inches apart onto ungreased cookie sheets. . Bake for 12 minutes or until edges are light brown and tops look set. Cool 1 minute on cookie sheets. Remove to cooling rack.
