Easy Vegan Fried Rice

This fried rice is ready in less than 30 minutes. It only requires a few ingredients plus is healthy.

Who doesn’t love easy recipes that are healthy and delicious. This rice is soy-free, vegan and healthy.

This recipe is one of my to go recipes. We Puerto Ricans love to eat rice. Rice is a staple in my kitchen. When I make white rice I make sure to always have leftovers so I can make this recipe. This meal is also great for meal prepping.

For this recipe I used; purple cauliflower, peas, carrots and broccoli but you can add as many more veggies as you want. Also I added my sofrito as a base and replaced the soy sauce for coconut aminos.

Puerto Rican Sofrito

This is the way my auntie used to make fried rice Puerto Rican style. We love flavors and creativity in the kitchen.

Here’s the recipe:

Easy Vegan Fried Rice

Ingredients:

2 tablespoons of olive oil

1 tablespoon of sesame oil

2 tablespoons of sofrito

3 tablespoons of coconut amino or more to taste.

1 handful of cilantro

2-3 tablespoons of water

1 cup of each of these veggies: cauliflower, carrots, broccoli and peas

2 cups of cooked white rice (leftovers better)

Salt and pepper to taste

Instructions:

  1. In a large saucepan over medium heat, sauté oils, sofrito, 1 tablespoon of coconut amino and cilantro until fragrant. For about 1-2 minutes.
  2. Add veggies and cook for about 4-5 minutes adding water.
  3. Add rice and stir until all the ingredients are incorporated.
  4. Add the rest of the coconut amino, sal and pepper to taste.
  5. Enjoy
