Pancake Cereal

These trendy Baby Pancakes or Pancake Cereal are fluffy, easy to make, and delicious. They are so much fun to make with your children at home. It’s just another fun way to eat pancakes but in tiny bite sizes. You can eat them however you want. Put them in a bowl and coat them with maple syrup or milk, or add fruits and toppings. This recipe is not only great for breakfast alone, but you can also have them any time of the day!

Pancake cereal it seems to be a trend on social media right now. They look so adorable so I wanted to try them to see if they were good. The results were amazing, they taste delicious and are so versatile. You can make them id advance and save in the refrigerator for a few days. I made a simple pancake recipe, you can use your creativity and add your favorite toppings or ingredients.

What Equipment do you need?

  • Non-stick sauce pan
  • Squeeze bottle, pipping bag or a ziplock bag to pour batter.
  • Small spatula or fork

Let’s Talk About Ingredients:

  • Flour: you can replace for gluten-free or whole wheat
  • Egg: the recipe calls for one egg, for a vegan version simply replace by adding 1/2 tsp of baking soda and 1 tsp pf baking powder.
  • Milk: I used almond but you can replace for your favorite.
  • If not using a non-stick pan make sure to grease the pan with non-stick spray.

Here’s the recipe:

Pancake Cereal

Serving: 2 bowls

Prep Time: 5 minutes

Cooking Time: 10 minutes

Ingredients:

  • 1 1/2 cups All-Purpose Flour
  • 1 cup Almond Milk
  • 1 Large Egg
  • Pinch of Salt
  • 1 TBSP Maple Syrup
  • 1 tsp Vanilla Extract Butter for dying (optional)

Instructions:

  1. In a large bowl combine milk, egg, salt, maple syrup and vanilla.
  2. Whisk to combine.
  3. Add flour slowly, mix just to combine. It’s okay to have a lumpy batter. Do not overmix.
  4. Pour mixture inside a pipping bag, zip lock bag or squeeze bottle. Cut the tip of the bag.
  5. Cook pancakes over medium high heat by squeezing the batter and forming tiny circles.
  6. Cook until bubbly and golden brown, for about 30 seconds, then flip over and cook for another 30 seconds.
  7. Transfer to a bowl when ready.
  8. Repeat the process until you used all the batter.
  9. Serve as you desire and enjoy!

These Pancake Muffin Bites come together in 30 minutes and are so easy to make. Just pour the pancake batter into the muffin tin, add toppings and bake!

This recipe is dedicated to our kindergarten students and all the students out there. In our classroom we hold a cooking class every Friday. Since we’re dealing with this crazy quarantine, I recorded a tutorial for them to make at home.

The recipe can also be made using a store-bought pancake mix or making everything from scratch like it’s explained in the recipe. You will need essential pantry ingredients, or feel free to replace those that you don’t have on hand.

Here’s some ingredients that you can replace when baking:

  1. Eggs: Use 1/4 cup of applesauce, unsweetened
  2. Butter: Replace for oil
  3. Sugar: Use maple syrup or for a sugar free version stevia.

For the toppings you can use anything that you have available.

Serving 12 muffin bites

Preparation Time: 8 minutes

Cooking Time: 22

Ingredients:

  • 2 cups All-purpose flour
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • 2 eggs (replace for applesauce for a vegan version)
  • 1 ½ cups almond milk (replace for any milk)
  • 2 tablespoons of sugar
  • 2 tablespoons butter, melted
  • Your favorite fruits, nuts, chocolate chips or any other toppings.

Instructions:

  1. Preheat oven to 350 degrees.
  2. Grease a muffin pan with non-stick spray or use cupcake liners.
  3. In a large mixing bowl combine dry ingredients and mix to combine.
  4. Add eggs or egg replacer and whisk until incorporated.
  5. Add milk, sugar and butter one a time, whisking to incorporate.
  6. Pour 3 tablespoons of mixture for each muffin.
  7. Add your favorite toppings and bake for 22 minutes or until an inserted toothpick comes out clean.
  8. Let it cool for 10 minutes. Enjoy as a snack or breakfast.

Dutch Babies Sugar-Free with Lemon Curd

These oven pancakes are also known as Dutch Babies, German Pancakes a Bismarck or a Dutch Puff. They require everyday ingredients and are ready in just 25 minutes. They are great for breakfast, brunch or even dessert.

Berries and Lemon Curd are the best combination.

The best way to eat them is with berries, jam, maple syrup, and whipped cream. I made a vegan lemon curd to go with it and it was so delicious. For the lemon curd, I used turmeric for color purpose but you can totally skip it or use food coloring. My version requires 3 eggs but you can totally replace the eggs using 1 tablespoon of vinegar along with 1 teaspoon of baking soda for each egg.
