If you are looking for a healthy recipe that takes just a few minutes to make, look no further. This spread is not only delicious but easy to make and packed with nutrients. Furthermore, this simple recipe will impress your guests and family. Feel free to add more veggies or seasoning. Even though I called this recipe smashed chickpea avocado spread, you can blend all the ingredients and turn it into hummus.

This recipe is great for:

  • Appetizer – to go along with pita chips, tortilla chips, or veggies.
  • Salad – use it to top your salad or eat it alone.
  • Sandwiches – add some vegan mayo and make some chickpea vegan tuna sandwiches.
  • Wraps – add your favorite veggies or protein and add this spread.
I added some homegrown lentil sprouts and added some more nutrients. My favorite way to eat this spread is over toasted pita bread as a pita bread pizza. In conclusion, if you are a fan of guacamole and hummus this recipe is for you.

Ingredients
  

  • 1 can chickpeas organic
  • 2 small avocados ripe
  • 1 cup grape tomatoes chopped
  • 1 tbsp cilantro chopped
  • 1 green onion stalk
  • 1/4 cup red onion chopped
  • 1 tsp garlic powder
  • 1 tsp cumin
  • 1 tsp onion powder
  • salt & pepper to taste
  • 1/2 fresh-squeezed lemon
  • 1 jalapeño optional

Instructions
 

  • Place chickpeas and avocado into a mixing bowl. Use a fork to mash until you get the desired consistency.
  • Add the rest of the ingredients and mix to incorporate.
  • Mix well and adjust the seasoning. Keep refrigerated until ready to use.
  • Store inside an airtight container in the refrigerator for up to two days.

Peanut Butter Jelly Fruity Caterpillar Kebabs

These fun Peanut Butter Jelly Fruity Caterpillar Kebabs are loaded with fresh fruit and protein. They’re a healthy snack the kids can help to prepare!

This is a fun idea for breakfast or snack for all your family. The ingredients are simple pantry staples that you probably already have. I used creamy peanut butter, guava jelly and fresh fruits but you can use your own ingredients.

I also used sugar eyes that I had for my cake decorating but you can use a tiny piece of banana or a chocolate chip.

For this recipe I used:

Ingredients & Tools:

  • Whole Wheat Seed Bread ( you can use any bread)
  • Creamy Peanut Butter
  • Guava Jelly (use your favorite)
  • Bananas
  • Strawberries
  • Green Grapes
  • Blueberries
  • Sugar Eyes (optional)
  • White candy melt, melted (for gluing eyes if using)
  • Round cookie cutter (you can use a knife)
  • Kebab sticks

Instructions:

  1. Spread PB and Jelly.
  2. Cut sandwich into small circles.
  3. Wash and prepare fruits.
  4. Slice banana and cut just the top of each strawberry.
  5. Assemble kebabs starting with PBJ circle and alternating fruits. The last fruit should be the strawberry.
  6. Melt candy melt or chocolate and using a toothpick glue the eyes.
